Hump Day

Today was another beautiful day of sunshine....I was able to enjoy a bit of it at lunch!  I went to lunch with some friends where we sat on the patio soaking up some vitamin d.
We went to Uncle Julio's, I ordered the veggie fajitas which were yummy!  I had leftovers and unfortunately had to use a take out container, but I didn't want to waste the delicious veggies.  Note to self start carrying a reusable container for impromptu times like this.

For dinner I had...you guessed it....the leftovers.
I forgot to take picture a before digging in.  My presentation was not as pretty as at the restaurant, oh well!
Since my boy's are not completely on board with the vegetarian diet, they had ground buffalo tacos....at least we all kept with the mexican theme.  I have noticed that since I became more aware of what I eat it has rubbed off on my boy.  He asked for a side vegetable with his tacos, enter baby carrots!  I am so proud of him.

After dinner we sat outside a bit and talked about our plans for summer vacation.  We are looking into taking a trip to Cali....fly into San Fran and then drive down the coast to San Diego.  It is planning time now, sooooo excited!

Nature is Calling

The weather is beautiful today and I tried to take advantage of it as much as I could.  Today for lunch I escaped my office cubicle and had a picnic at the park.
Lunch was a mock chicken salad sandwich, carrots/celery and an orange.  It was so wonderful to sit in the sun, it has been a brutal winter for Texas!  It actually snowed here again just a couple weeks ago....YES, snow in March!  Bringing your lunch to work can be very environmentally friendly.  For one thing you are avoiding all of the garbage that take out can generate.  Notice the cloth napkin, NO trash generated from me!

After work I scarfed down dinner:  leftover beans and rice with sriracha sauce and pumpernickel bread with soy butter.
I couldn't  wait to get back outside again.  My boys scored free passes to see an early screening to Clash of the Titans.....so, I had the house to myself!  But, it was too beautiful to waste it hanging inside the house.  I was going to go to a yoga class, but opted to take one of my three dogs for a walk.  So, off we went.....
There is a track a couple block down the street.....the entire loop is 1.22 miles for just one lap!  It was  a great day for a walk.  I find that I just have sooo much more energy this time of year.  I found myself skipping and singing out loud with my ipod.
The sun is going down, better head back home.  I hope you were able to find some time to enjoy nature today.

It Pays to be Cheap

I am finishing up reading a book I picked up at the library, "America's Cheapest Family.
"  It was a fun read, lots of great tips that are actually very good for the environment.  They don't market it as a green book, but it follows the same philosphy......stop buying all of the cheap stuff you don't really need!  That is probably the easiest way to go green...just stop buying stuff that you really don't need which in the long run just ends up in a landfill.  I like reading books like this because it helps to remind me of the stuff I don't need and the impact all of that junk can have not only to the environment, but also to your bank account.  My New Year's Resolution was to not go into a mall, BUT living in suburbia and having a mall so close it can be difficult to lose sight of the greater purpose and give in to that consumeristic need.  I admit I fell of the wagon, but I have since pulled my self up and am back on again...no MALLS for me!  There is nothing that I need that bad, I would much rather spend my precious week-ends enjoying nature at the park or just reading a book in my backyard than walking around a crowded mall being tempted by all of the junk I don't need.  Most of which will either end up sitting in my closet with the tags on them until I feel guilty enough to make another trip to the mall to return....major time wastage, not to mention the gas getting there and back again! OR, the junk will be used once, then tossed aside waiting for its destiny in another garage sale.  Speaking of garage sales, I have a garage full of this type of stuff just waiting for warmer weather to be displayed in my driveway hoping to be snagged up by someone who will appreciate it more than I did.  I cringe to think of all the time, money and precious resources I have wasted acquiring all of this JUNK!

Hello Green Friends!

This is my very first time blogging! I started this blog as a way for me to document my journey to find my inner green soul. I have done a lot in the past year. I have gone vegan, started a yoga practice and this spring I am starting a garden. Join me on my journey....I welcome advice, tips and feedback.
